- 5 cups of beef broth
- 4 slices of crusty French baguette

- 3 springs of fresh parsley
- 3 springs of fresh thyme
- One cup of Gruyère cheese
- 1/4 teaspoon of flour
- Half a cup of sherry

Preparation method
- Slice the onion into tiny pieces and it should be finely sliced.
- Get your Dutch oven and heat it up to medium-high.
- Melt the butter in the oven.
- Then add the onion to the pot and sprinkle it with flour. You can reduce the heat if the onion is cooking too much. Cook the onion for like 40 minutes till it’s soft and golden in color.
- Then refine the pot with sherry. Pour the beef broth and add salt, pepper and any other seasonings or herbs to taste.
- Reduce the heat and cook gently for, like, 20 minutes.
- After, slice the French bread, bake it in the oven for like 10 minutes until it turns brown, and set it aside.
- Remove the bay leaf and any other herb stems.
- Then, put the toasted bread on top of the soup and sprinkle the bread with cheese, like Gruyère.
- After, you place the soup bowl on a cookie sheet and bake until the cheese melts and is bubbling. Boil for a few minutes to brown the top.
- Then carefully remove the soup from the cookie sheet.
- Serve the soup.
